Zucchini Banana Bread
Fall is in the air and the zucchini is plentiful in the garden! So what better time to make some delicious zucchini banana bread…
INGREDIENTS:
1 cup of bananas
3 cups of zucchini
3 eggs
½ tsp of baking soda
1 tsp of baking powder
1 ½ tsp of cinnamon
3 3/16 cups of flour
1 tsp of salt
2 cups of sugar
2 tsp of vanilla extract
1 cup of coconut oil
INSTRUCTIONS:
Preheat your oven to 350 degrees. Spray a 9 by 5 inch loaf pan well with coconut oil spray.
In a large bowl, whisk together the flour, baking soda, baking powder, and salt. In a medium bowl, whisk together the bananas, eggs, coconut oil, sugar, cinnamon and vanilla. Gently fold the wet ingredients into the dry ingredients. Be careful not to overmix.
Stir in the shredded zucchini until just combined. Pour the bread batter into the prepared pan. Bake for an hour or until a toothpick inserted slightly off-center in the bread comes out with just a few crumbs.
Allow the bread to cool in the pan for 10 minutes. Then remove and allow to cool on a cooling rack for 35 minutes before slicing and enjoying.
