Tzatziki Chicken with Zucchini

Especially since we will be enjoying one of my favorite clean recipes: Tzatziki Chicken with Zucchini. Not only is this meal as a whole delicious, but Tzatziki sauce…well, it’s something I make regularly.

INGREDIENTS: (very important to make sure these are clean & organic)
3 Chicken Breasts
5 Zucchini’s
Whole Fat Organic Grass-Fed Greek Yogurt
1 Lemon
Olive Oil
3 Garlic Cloves
Sea Salt
Pepper
Dill
Mint
1 Cucumber
2 cups of Quinoa
INSTRUCTIONS:
First, start by making the the tzatziki sauce:
Mix 1 cup finely grated cucumber (after patting the cucumbers somewhat dry with a towel) with 2 cups of whole organic full fat greek yogurt. Add in two tablespoons of lemon juice, 1 tbsp of olive oil, the 2 grated garlic cloves and ½ tsp of sea salt, 2 tbsp of dill finely chopped and 2 tbsp chopped mint.
Put 2 cups of quinoa in a rice-cooker with 4 cups of water!
Place the chicken breasts (room temp) on a baking pan and lather in olive oil. Season the chicken with salt and pepper on both sides and place in the oven at 425 for 25-30 min or until the inside temp is 165. Cut the ends off the zucchini and cut down the middle on the length side, then repeat once again until you get 4 long slices of zucchini. Do this for all of the zucchini and then place on another baking sheet and lather in olive oil and season with salt and pepper. You can add some dill to this as well. Place in the oven for 15 minutes. When the chicken and zucchini is all cooked you can distribute into three meals equally with quinoa on bottom, add in chicken and zucchini and cover with tzatziki sauce.
